How Does Refractance Window Drying Work?
RWD is a smart way to dry food using hot water instead of direct hot air. In this process, the system spreads a thin layer of product on a Mylar film belt. This film floats on top of a shallow hot water bath.
The radiant energy from the water moves through the film and directly into the product. As a result, moisture evaporates very quickly. Moreover, even if the water temperature reaches 99°C, the product stays between 60°C and 70°C. This happens because of evaporative cooling. This prevents the product from burning and protects its delicate properties.
